My favorite website (Pinterest) has introduced me to the idea of a low carb pizza crust. I love it!
I feel like this is one of the MOST popular pins out there. Who wouldn't like a low carb version of one of America's favorite meals.

Cons/Questions/Suggestions (there are literally over 500 comments so I stopped after about 300):
- Substitute Cheese?
- Yes! Experiment and try!
- Main issue: Sogginess. Cannot hold pizza slice like traditional pizza.Never gets crispy like a traditional pizza. Have to eat pizza with a fork due to sogginess.
- Perhaps too think? Use a method to make the pizza level.
- Make smaller pizza to avoid sogginess
- Use parchment paper to flip the pizza during baking step to make the center firmer.
- Put cheese topping on before the sauce to reduce moisture
- Don't cook the cauliflower too much (a firm not soft texture)
- Poke a hole in the middle (pizza doughnut vs pizza pizza)
- Use more cauliflower vs egg vs cheese
- Suggestion: brush it with olive oil before baking
- No microwave
- Steam the cauliflower then rice it, works the same

Fail. It ended up sticking so much to the pan that I couldn't even flip it! I remade the "pizzas" with what I could flip and ate pizza mush for dinner. wah wah.
Second attempt:
- Use a Silpat/non stick foil and cooking spray
- Did NOT cook the cauliflower at all
- Made smaller pizzas vs one large pizza
- Flipped pizza midway during process
Success! We made amazing little pizza that were crispy and delicious! I did buffalo chicken, mushrooms, red peppers and cheese for this one. I also use a spicy pasta sauce vs pizza sauce (I think pizza sauce is too sweet).

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)

To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.

To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

*Note that toppings need to be precooked since you are only broiling for a few minutes.
