Sugar Cookie Tarts

After seeing this pin, I thought what a great idea for a dessert bar:

From lemonpoppyinc.com

I could make sugar cookies and have cool whip or whipped cream out and at get togethers friends could choose their own fillings!

I found a simple sugar cookie recipe online from allrecipes.com with 5300+ reviews and a 4.5 star rating:

  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  3. Bake 6 to 8 minutes in preheated oven. Cool completely.

I adjusted the recipe for 20 cookies vs 60!
Made the simple dough
Rolled into cookie size balls

Smooshed ball into muffin tin with appropriate sized base (shot glass)

After smooshing
After 8 minutes in oven. They poofed up a bit so I smooshed them again with the shot glass.
After baking for 2-5 more minutes

After cooled - it easily comes out of the muffin tin (no pre-greasing)

Add filling of choice!
